As I promised, this is the cake I made for the holiday dinner party earlier in the week. The cake is very moist, but a bit “crumbly” when cutting. It was a big hit and keeps wells in the refrigerator.
MIX CAKE MIX, WATER, OIL, EGGS, AND ORANGE PEEL TOGETHER THEN FOLD IN CRANBERRIES AND WALNUTS. MIX JUST UNTIL BLENDED
POUR BATTER INTO 2- 9 INCH ROUND PANS AND BAKE FOR 30-35 MINUTES IN A PREHEATED 350-DEGREE OVEN. COOL BEFORE FROSTING.
BEAT CREAM CHEESE AND BUTTER UNTIL FLUFFY. ADD POWDERED SUGAR, VANILLA AND ORANGE PEEL.
BEAT UNTIL WELL BLENDED. FROST CAKE BETWEEN LAYERS AND ON TOP AND SIDES.
DOUBLE THIS RECIPE FOR A 3-4-LAYER CAKE!
GARNISH WITH FRESH CANDIED CRANBERRIES (MAKE A SIMPLE SUGAR AND POUR OVER FRESH CRANBERRIES AND LET SET TO SLIGHTLY HARDEN AND THEN DUST WITH GRANULATED SUGAR).
