I had a lovely, restful weekend at our lake house this past weekend and enjoyed trying a new recipe! Our “next door neighbors”, Anne and Wayne Woody, invited us to dinner on Saturday evening and my assignment was to bring a dessert. I love making desserts and had just been looking through one of my old Bon Appetit magazines when I received my “assignment”. I had found some beautiful, locally grown blackberries that morning and decided to try one of their delicious looking summer recipes! How difficult could Lime and Blackberry Italian Meringue Pie possibly be?!? Well, perhaps not difficult, but a bit time consuming!! I started with a nice flaky crust, my own recipe, and then followed their direction for the blackberry compote. After placing the compote on a cooled crust, I topped with the lovely, tart lime curd.
I might perhaps use my own recipe for the meringue when I make this again, as their recipe didn’t seem to be as stiff as I would have liked. (Perhaps it was the cook!!).
But I was pleased with the finished product and my fellow dinner guests seem to enjoy. The lime curd layer was not real firm, thus it did not cut out very beautifully, but that didn’t seem to effect the taste!
My husband made fun of me, saying that I never do anything simple, but of course he “cleaned his dessert plate”!
