I thought you might enjoy a couple of recipes from last week’s dinner party menu at Chestnut Cottage. Two of my favorites on the menu were the Blueberry Goat Cheese Tarts and my very old Summer Squash Casserole.
The delicious Blueberry Goat Cheese Pie is adapted from a recipe courtesy of Alex and Moira Sommers at 3 Sisters Café in Indianapolis, IN. Instead of a pie, I prefer this recipe in an individual tart size.
I like this recipe because it is not real sweet!
Another favorite is an old summer, yellow squash casserole that was given to me by my longtime friend, Frances Smathers. I like this recipe because it is lighter than most squash casserole recipes, perhaps because it has no cheese.
